Greek-Style Chicken Sandwiches with Fresh Tzatziki
Number of Portions: 4
Portion Size: 1 Sandwich
Recipe Yield: 4 Sandwiches
Ingredients:
- 1 Pound Boneless, Skinless Chicken Breasts or Tenders
- 1/2 Tbsp. Fresh Oregano, minced
- 1/2 Tbsp. Fresh Thyme, minced
- To Taste Cracked Black Pepper
- 1/2 Cup Yellow Onion, thin sliced
- As Needed Cooking Spray
- 1/2 Cup Green Bell Pepper, thin sliced
- 4 ea. Large Tomato Slices, 1/4 inch thick
- 1 Cup Fresh Baby Spinach
- 1/2 Cup Reduced Fat Feta Cheese Crumbles
- 4 ea. Aunt Millie's Whole Wheat "Slimwhiches" or Whole Wheat Pita Bread
- As Needed Fresh Tzatziki, recipe follows
Procedure:
1. Heat an electric indoor grill, like a George Forman, according to manufacturer's directions. A stove top griddle pan over medium heat may also be used.
2. In a medium mixing bowl, combine chicken, oregano, thyme, and cracked black pepper.
3. Spray grill with cooking spray. Place chicken onto the grill and cook until the internal temperature reaches 165 degrees and is golden brown on the outside.
4. Wipe the grill clean, if needed, to remove any brown bits. Spray the hot grill with cooking spray and place onion and green pepper onto the grill. Cook until the vegetables become flexible and lightly caramel colored. Remove from heat.
5. Place the chicken onto the bread. Top with peppers, onions, tomato, spinach, feta, and tzatziki.
Fresh Tzatziki
Ingredients:
- 1 Cup Plain Yogurt, Greek style preferred
- 3/4 Cup Cucumber, peeled, seeded, grated
- 3 ea. Garlic Cloves, minced
- 2 Tbsp. Extra Virgin Olive Oil
- 2 Tbsp. Fresh Lemon Juice
- 1 Tbsp Fresh Herbs (Dill, Mint, or your favorite variety)
- To Taste Cracked Black Pepper
Procedure:
1. Combine yogurt, cucumber, garlic, olive oil, lemon juice, herbs, and pepper.
2. Refrigerate for at least 1 hour before serving.
