Sweet Potato Pancake GF
• 1 ¼ cup brown rice flour
• ½ cup tapioca flour
• ¼ cup potato starch
• ½ t xanthan gum
• 1 T+1 t baking powder
• 1 t salt
• 2 T brown sugar
• 1 T cinnamon
• 4 eggs, beaten
• 1 ½ cup milk
• 1 cup sweet potatoes, pureed
• ½ cup oil
In a large bowl combine dry ingredients and create a well. In a separate bowl combine wet ingredients. Pour wet ingredients into well and combine thoroughly.
Cucumber Ginger Salad
• 1 english cucumber, thinly sliced
• 2 T pickled ginger, minced
• 1 red onion, halved & thinly sliced
• ½ cup sugar
• ½ cup apple cider vinegar
• 1 t salt
In a bowl add vegetables together. Add sugar, salt and vinegar. Toss together and use within 2 days.
Crème Fraiche
• 1 T buttermilk
• 1 cup heavy cream
Combine buttermilk and heavy cream, cover with cheese cloth and let sit for 8 hours. Refrigerate for 24 hours before use.
Smoked Black Pepper Syrup
• 1 T smoked black peppercorn, coarse grind
• 1 cup water
• 1 cup sugar
In a pan add water, sugar, and pepper and cook until sugar dissolves.
